easy layered vegetable bake

Here's another hit recipe for you. There's a fair amount of prep time but the conclusion is a healthy treat.

Ingredients:

1 pkg. Stove Top Stuffing Mix for chicken
5 eggs, divided
1 1/2 cups Kraft Mozza-Cheddar shredded cheese, divided
1 onion, chopped
1 pkg. frozen chopped spinach, thawed, drained
3/4 cup red pepper strips
2 tomatoes, sliced

Heat oven to 400ºF.

Prepare stuffing mix as directed on package. Add 1 egg; mix well. Press onto bottom of 9-inch square baking dish sprayed with cooking spray; sprinkle with 3/4 cup cheese.

Cook and stir onions in medium non-stick pan for 5 minutes or until tender. Remove from heat; stir in spinach. Spoon half over cheese layer in baking dish; top with layers of peppers, remaining cheese and remaining spinach mixture. Beat remaining eggs; pour over ingredients in baking dish. Top with tomatoes.

Bake 40-45 minutes or until centre is set.

aloha pork chops

I decided this past weekend, after throwing out onions and potatoes that had gone bad, that I would make a dinner menu for the week along with the groceries that I would need for that menu. This way nothing will go to waste again.
With that being said, our first dinner on the menu was Aloha Pork Chops. It was incredibly easy to make and was a hit with both the hubby and I, therefore I wanted to share the recipe with you all. So far I am 1 for 1 :)

Ingredients:

4 tbsp Kraft Original BBQ Sauce
4 tsp Soy Sauce
4 boneless pork chops
4 drained canned pineapple rings

Heat greased barbecue to high heat.
Mix BBQ sauce and Soy sauce together. Grill chops for 1-1/2 minutes on each side. Reduce heat to medium. Brush the chops with half of the BBQ/Soy mixture and grill for 4 minutes. Flip the chops over and brush them with the remaining of BBQ/Soy mixture. Add pineapples to the grill and grill both the chops and pineapples for 3-4 minutes or until chops are done (160°F) and pineapples are heated through.
Serve each chop topped with a pineapple.

croque monsieur

Yesterday afternoon I was watching, for the 50th time, the movie 'It's Complicated' featuring Meryl Streep. At one point in the movie, she's making supper for Steve Martin in her gorgeous to-die-for kitchen and she pulls bread out of the oven which looks delicious. I googled it and found out it's 'Croque Monsieur'. After countless times of telling myself I will try to make it, I finally decided that yesterday was the day. I got home pretty late so I made this quick version and it was amazing. However I will try this longer version which is apparently the same as the movie, when I have more time.
Next recipe to try: lavender honey ice cream...yum!

pouding chomeur

Pouding chomeur is a dessert which originates from Quebec and also goes by the name "poor man's pudding".
Very simple to make and very tasty. I made this for family get together's on Christmas Eve & on Christmas and was enjoyed by all.
Yup, as you can see...NO BABY YET!!!

Ingredients for syrup
1 1/2 cups brown sugar
1 1/2 cups water
3 tablespoons of butter or margarine
1/2 teaspoon of vanilla

Ingredients for batter
3/4 cups of sugar
3 tablespoons of butter or margarine
3/4 cups of milk
1 pinch of salt
1 1/2 cups of flour
2 teaspoons of baking powder

1. In a saucepan, melt butter/margarine; stir in brown sugar.
2. Add water & vanilla.
3. Bring to a boil.
4. Meanwhile, make the dough.
5. In a bowl, cream butter/margarine; add sugar.
6. In a separate bowl, combine flour, baking powder, and salt.
7. Add to butter/margarine mixture alternately with milk.
8. Pour syrup into a 9 x 13 baking dish.
9. Drop dough by teaspoons over syrup.


10. Bake at 350F for 30 minutes.


Best when eaten right out of the oven topped off with some vanilla ice cream.

so delicious

I'm off to a supper at a friend's country place so I might not be able to post until tomorrow. Therefore I leave you with this scrumptious recipe of a pie I made for the supper.
Chocolate pudding delight. There's not even a recipe needed that's how easy it is. All you need is a graham cracker pie crust, chocolate pudding, and strawberries. Make the chocolate pudding and pour it into the pie crust. Add your strawberries over the pudding. Voila! Doesn't get any easier and tastier than this :)

peanut butter-brownie pie

I made this pie yesterday and it was a huge success. How could it not be? I mean, who doesn't love peanut butter and chocolate??!?!!

what you need
1 pkg. (450 g) brownie mix
1 pkg. (4-serving size) Jell-O Vanilla Instant Pudding
1-1/2 cups cold milk
1/2 cup Kraft Smooth Peanut Butter, divided
1 cup thawed Cool Whip Whipped Topping

                                                                    



make it

HEAT oven to 350ºF.
1. Prepare brownie batter as directed on package; pour into 9-inch pie plate sprayed with cooking spray. Bake 30 minutes. Cool completely. Scoop out centre, leaving 1/2-inch thick rim around edge and thin layer of brownie on bottom. Reserve removed pieces.
2. Whisk together pudding mix and milk for 2 minutes. Add 1/3 cup of peanut butter; mix well. Stir in Cool Whip. Spoon into crust; top with reserved brownie pieces. 
3. Microwave remaining peanut butter in microwaveable bowl on high for 1 minute; stir. Drizzle over pie. Refrigerate 2 hours or until pie is firm.

bloomin' onion

Last night's birthday supper/evening was a success. Andrew loved every minute of it and his wish...that everyday could be his birthday :)
The hit of the evening, a delicious fried onion with dip that I made for our appetizer. I found the recipe on the Food Network site and the picture was just so tempting that I had to make it. I was a bit worried that it wouldn't turn out good seeing as it was the first time making it but if you follow the instructions properly, a delicious treat for all to enjoy. This recipe is definitely making it into my recipe book.




For the Dip:
2 tablespoons mayonnaise
2 tablespoons sour cream
1 1/2 teaspoons ketchup
1/2 teaspoon Worcestershire sauce
1 tablespoon drained horseradish (I skipped this ingredient)
1/4 teaspoon paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper

For the Onion:
1 large sweet onion, such as Vidalia (about 1 pound)
2 1/2 cups all-purpose flour
1 teaspoon cayenne pepper
2 tablespoons paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
Freshly ground black pepper
2 large eggs
1 cup whole milk
1 gallon soy or corn oil
Kosher salt


Combine all of the dip ingredients in a bowl, cover and refrigerate.

Slice the onion (see below). Whisk the flour, cayenne, paprika, thyme, oregano, cumin and 1/2 teaspoon black pepper in a bowl. In a small deep bowl, whisk the eggs, milk and 1 cup water.

Place the onion in a separate bowl, cut-side up, and pour all of the flour mixture on top. Cover the bowl with a plate, then shake back and forth to distribute the flour. Check to make sure the onion is fully coated, especially between the "petals." Lift the onion by the core, turn over and pat off the excess flour; reserve the bowl of flour.

Using a slotted spoon, fully submerge the onion in the egg mixture (spoon on top, if necessary). Remove and let the excess egg drip off, then repeat the flouring process. Refrigerate the onion while you heat the oil.

Heat the oil in a large deep pot over medium-high heat until a deep-fry thermometer registers 400 degrees. Pat off excess flour from the onion. Using a wire skimmer, carefully lower the onion into the oil, cut-side down. Adjust the heat so the oil temperature stays close to 350 degrees. Fry about 3 minutes, then turn the onion over and cook until golden, about 3 more minutes; drain on paper towels. Season with salt and serve with the dip.


How to Slice a Bloomin' Onion
1. Cut off 1/2 inch from the pointy stem end of the onion, then peel.
2. Place the onion cut-side down. Starting 1/2 inch from the root, make a downward cut all the way through to the board.
3. Repeat to make four evenly spaced cuts around the onion.
4. Continue slicing between each section until you have 16 evenly spaced cuts.
5. Turn the onion over and use your fingers to gently separate the outer pieces.

Carmelita Bars

A food post was in my future nearer than I expected. I couldn't resist baking these delicious Carmelita Bars from my new favorite website Desserts Easy & Quick (theminibaker.com).
Thumbs up from everyone that's tasted them!

Ingredients for crust/topping:

2 cups flour
2 cups oatmeal
1 cup brown sugar
1 tsp. baking soda
1/2 tsp. salt
1 1/2 cup melted butter

Ingredients for yummy gooey center:

12oz chocolate chips
1 cup chopped walnuts or pecans (I used pecans)
12oz caramel ice cream topping
6 tbsp. flour

1. Combine crust/topping ingredients and press 1/2 of mixture in a greased 9X13 inch pan. Bake at 350 degrees for 10 minutes.



2.Make a layer of chocolate chips over baked mixture.


3. Make a layer of nuts over layer of chocolate chips.


4. Combine caramel topping with flour.


5. Pour caramel topping over layer of nuts.


6. Top with remaining crumb mixture.


7. Bake 20 minutes at 350 degrees. Once baked, chill for easy cutting.


DELICIOUS!!!!

Here is a picture of a beautiful brunch my mother prepared for Father's Day. Aside from the sausages, I ate at least 1 of everything on the table. I was stuffed but completely satisfied :)

Late night craving

I'm back at work after a relaxing week off. It rained most of our vacation which was a good thing. It forced us to stay indoors and do absolutely nothing. We're the type of people with a mentality of "there are 24 useful hours in every day" therefore we're always on the go so it felt great to just stay in pj's and watch movies.
Now that I'm up and about, the posts will be pouring in :)

Last night at around 8pm or so, I had a craving for nutella and peanut butter. I decided to make cookies which consisted of these 2 ingredients. DELICIOUS!!! They hit the spot, my sweet tooth was satisfied and I felt much better :)

PEANUT BUTTER & NUTELLA COOKIES

Ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup peanut butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups all-purpose flour
  • 1/2 cup Nutella, or as desired

1. Combine butter, peanut butter, sugars, egg, and vanilla extract. Blend together well.



2. Add flour, baking soda, and salt into batter.



3. Add Nutella and swirl it through the dough with a butter knife. Chill dough for 15 minutes in the refrigerator.

4. Roll into balls by hand.

5. Place on greased cookie sheet.

6. Using a fork, press down on the balls create a criss cross pattern. Bake at 350ºF (175ºC) for about 7-10 minutes or until edges are lightly browned. Don't overbake.

Simple Crepes

Doesn't it feel great to wake up on a Friday morning knowing that you're not going into work that day! And to make the morning even sweeter is waking up and having your breakfast already prepared and served to you.
It was our 6 year anniversary yesterday from the day Andrew and I decided to date officially. Seeing as it was a work day Andrew had great plans for me this morning as we're off for Good Friday. He woke up earlier than I and surprised me with this delicious breakfast. Chocolate, strawberries, and I didn't have to cook it myself...doesn't get any better than this. The sweetheart even took pictures for me of the process in order for me to post about it. What a doll!

Ingredients
  • 1 cup of flour
  • 2 eggs
  • 1/2 cup of milk
  • 1/2 cup of water
  • 1/4 teaspoon of salt
  • 2 tablespoons melted butter

Directions
  • In a large mixing bowl, whisk together the flour and the eggs.
  • Gradually add in the milk & water, stirring to combine.
  • Add the salt and butter, beat until smooth.
  • Heat a lightly oiled pan over medium/high heat. Pour or scoop the batter into the pan. (You can make 2 large crepes as per our picture by splitting the batter in half. Or 8 crepes by using 1/4 cup per crepe.)
  • Tilt the pan in a circular motion in order to coat the bottom of the pan evenly with the batter.
  • Cook the crepe for about 2 minutes or until the bottom is light brown. Loosen with a spatula and flip to cook the other side the same way. 
  • Once it's cooked, you can add the strawberries or fruit of your choice with chocolate syrup or Nutella and warm slightly. Serve hot.
  • You can garnish with powdered sugar as our picture and you can also add any of your favorite toppings like whipped cream, ice cream, english cream, etc.

Gnocchi

My favorite pasta of all time is gnocchi. If I go to a restaurant and they have it on the menu...I'm ordering it.

Andrew and I hosted a lunch for 11 people this afternoon, therefore what better reason to try a new recipe I had received from a friend of mine...sweet potato gnocchi. That along with about 6 other dishes. I'm surprised I'm actually awake right now to write this post after all the cooking and cleaning I've been doing.
Last night the Italian in me arose. We prepared the gnocchi around 11pm with great oldie's music playing in the background to liven us up accompanied by some delicious rose wine. Who knew cooking can be so fun :)
Below are a few pictures of the pasta in the making, the recipe, and a video of Andy Garcia rolling gnocchi in the movie Godfather III.
I would've taken pictures today during lunch to show you the final product but I was too busy accommodating everyone that I did not have time to bring out the camera. Let me just say that they were enjoyed by all.

Original Recipe Yield 4 servings


Ingredients

  • 2 (8 ounce) sweet potatoes
  • 1 clove garlic, pressed
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1 egg
  • 2 cups all-purpose flour

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Bake sweet potatoes for 30 minutes, or until soft to the touch. Remove from the oven, and set aside to cool.
  2. Once the potatoes are cool enough to work with, remove the peels, and mash them, or press them through a ricer into a large bowl. Blend in the garlic, salt, nutmeg, and egg. Mix in the flour a little at a time until you have soft dough. Use more or less flour as needed.
  3. Bring a large pot of lightly salted water to a boil. While you wait for the water, make the gnocchi. On a floured surface, roll the dough out in several long snakes, and cut into 1-inch sections. Drop the pieces into the boiling water, and allow them to cook until they float to the surface. Remove the floating pieces with a slotted spoon, and keep warm in a serving dish. Serve with butter or cream sauce.

Catalina Cranberry Chicken

Spent most of my morning cleaning up and doing some laundry which is my typical weekend. Fun, fun, fun :(
Had my in-laws over for lunch and decided to try something new. Opened up one of my Kraft magazines again and made Catalina Cranberry Chicken. Literally took me 5-10 minutes to prepare as it's only 4 ingredients and everyone loved it.

Fast Fruity Delight

Just so you all know, I am not the greatest cook in the kitchen. Passion and lack thereof is the main reason as to why my meals just never turn out scrumptious. However, baking and desserts...second nature to me. So you can imagine how ecstatic I was to land upon the Kraft Foods website flooded with delicious and easy to follow recipes. It consists of more than just desserts yet it's the sweets that I'm attracted to. 
This past week I tried this budget friendly recipe that took 10 minutes to prepare and 50 seconds to devour. My hubby, who unlike me is not a fan of sugar, also loved it!
For all you sweet tooth's out there, this dessert should be added to your recipe box.
