Big Mac Pizza - Say What???

I love Big Mac's. I love pizza. Combine the two together and you have one of the most tantalizing meals you'll ever have. A Big Mac Pizza!
I first tasted this a year ago at a local café and instantly fell in love. This past weekend, we organized a pizza party at my place and of course, I had to try and replicate the infamous b-mac pizza for everyone. Score! It was devoured and gone in minutes. The top pizza of the night by far.
The recipe I followed was from Kraft. Easy and delicious :)
 
Ingredients
  • Ground beef
  • Kraft Thousand island Dressing
  • 1 pizza crust
  • Kraft Pizza Four Cheese Blend
  • Lettuce
  • Pickle slices (optional)
 
1. Brown ground beef in a skillet.
2. Spread 1/2 cup of dressing on pizza crust.
3. Sprinkle on 1 cup of cheese.
4. Place desired amount of cooked ground beef on top of cheese layer.
5. Cover with another cup of cheese.
6. Bake in oven at 425 degrees F for about 20 minutes or until lightly browned.
7. Shred lettuce and place on pizza with pickle slices.
(I omitted the pickles as I also do with my Big Mac, and I sprinkled some more dressing on pizza before serving.)

Petit Lapin

I had the privilege of attending the 2 year anniversary of Petit Lapin Patisserie. Petit Lapin is a bakery where they provide all food lovers with delicious sweet treats that are allergen free, gluten free and lactose free along with organic and vegan products. We also celebrated the launch of their Deluxe Cupcakes which is a merging of cupcake and donut in one single bite. Just delectable!
Viviane Nguyen, the founder of Petit Lapin, opened up this bakery because of her undying love for her son who is allergic to many foods out there. After many numerous phone calls and bakery visits, she could not find a cake that she can give her son for his very first birthday. And what’s a first birthday without a good ol’ cake smash? So she decided to take matters into her own hands. After extensive research and trial and errors, she managed to bake her son his very first cake and he got to experience it like every kid, all over his face.
She wanted other kids and adults to enjoy this same feeling therefore she opened up Petit Lapin, a special, kid friendly and colorful place where she serves classic sweet treats that are not only allergen free but also as delicious or even better than traditional recipes. A first in Montreal!

Recipe: Minestrone

Ingredients:

1/4 cup pure olive oil
8 celery stalks with leaves, diced
3 carrots, diced
1 large onion, diced
3 medium potatoes, diced
1 can Italian peeled tomatoes, chopped, with juice
8 cups chicken stock
1 cup frozen peas
1/4lb small noodle pasta
2tbsp fresh basil, chopped
grated parmesan cheese
salt
pepper

* Heat the olive oil in a large pot. Add celery, carrots and onion. Cook about 5 minutes, stirring occasionally.
* Add potatoes, tomatoes with juice, and chicken stock. Season with salt and pepper to taste. Cook for 15 minutes.
* Add peas and pasta. Cook 7-8 minutes or until pasta is tender. Add basil and serve with Parmesan cheese sprinkled on top.

holiday sweet treats

TGIF! Today I was lucky enough to indulge my sweet tooth (a lot). There was a sugar rush addiction party at the office and everyone pitched in to bake their best. All the money was going to charity...so why not, right? I mean, today could be my cheat day (along with Saturday and Sunday - YOLO).
 
So I got a few things...and by few I mean like 10 things but that's totally beside the point stop judging me mom let me live my life.
 
Among those delicious vices I indulged in at 10am before lunch, there were amazingly decorated gingerbread cookies (classic), gluten/egg/dairy-free homemade marshmallows (intriguing), and pretzel-piece magic bars (decadent).
 
Because I'm totally on a sugar-high right now and have about 10 minutes before I crash and need to take a nap like a 3 year old, I figured I would track down these bake sale superheroes that confectioned the snacks and get their recipes for you!
 
 
 
Homemade Organic Marshmallows
  • 1 cup water
  • 3 tbsp. powdered gelatin
  • 1 cup organic honey
  • 1 tsp. organic vanilla extract
  • 1/4 tsp. salt
  • organic icing sugar to coat
In a bowl, pour in gelatin with half the water. Let "bloom". In a pot, pour in rest of the water, the honey, the salt and the vanilla. Turn up heat to medium-high, and let boil until your syrup reaches 115 degrees Celcius. Remove from heat and slowly pour into gelatin mixture while mixing on low (either with a hand mixer or stand mixer). Once everything is incorporated, mix on high for 10 minutes. Pour the marshmallow mix into a clean film lined pan and refrigerate for at least 2 hours. Take marshmallow square out and cut into smaller squares. Coat the outside with organic icing sugar (or any coating you prefer!)
 
 
 

 
Decked-Out Gingerbread Dudes
  • 3 cups all-purpose flour
  • 1/2 tsp. salt
  • 3/4 tsp. baking soda
  • 2 tsps. ground ginger
  • 1 tsp. ground cinnamon
  • 1/4 tsp.  ground nutmeg
  • 1/4 tsp. ground cloves
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated white sugar
  • 1 large egg
  • 2/3 cup un-sulphured molasses
For Icing
  • 2 large egg whites
  • 2 tsps. fresh lemon juice
  • 3 cups confectioners (powdered or icing) sugar, sifted
In a large bowl, sift together the flour, salt, baking soda, and spices.
In your electric mixer bowl, with the paddle attachment (or with a hand mixer), beat the butter and sugar until light and fluffy. Add the egg and molasses and beat until well combined. Gradually add the flour mixture, beating until incorporated.
Divide the dough in half and wrap each half in plastic wrap and refrigerate until firm (at least two hours or even overnight).
On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch. use a gingerbread cutter to cut out the cookies. Place on parchment paper-lined baking sheet. Bake at 350 degrees F for about 8-12 minutes depending on the size of the cookies in the center of oven. They are done when they are firm and edges are just beginning to brown. Take out of oven and cool completely.
Frosting can be used to decorate the cookies.
 
 
 

 
Magic Bars
  • 1/2 cup + 2 tbsp. butter, melted
  • 2 cups graham cracker crumbs
  • 1 can + 1/3 can Eagle Brand Sweetened Condensed Milk
  • 2 cups semisweet chocolate morsels or chips (bag)
  • 1 1/3 cups flaked or shredded coconut (or replace with more pretzels or graham crackers)
  • 1 cup chopped pretzels
Heat oven to 350 degrees F (325 degrees for glass dish). 9x13" baking/roasting pan, must use parchment paper at bottom and up sides.
Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture.
Layer evenly with coconut, chocolate chips, and pretzels. Press down firmly with a fork.
bake 26 minutes (exactly) or until lightly browned. Cool overnight. Cut into bars or squares.
Store covered at room temperature.

my little princess

Over the weekend, we celebrated Amelia's birthday who turned 2 on July 15th. Yup...my little angel is 2!
She's tiny but fierce. I feel sorry for anyone who gets in her way. She talks up a storm. She loves music and dancing. She loves to be tickled. She's got enough energy for our entire household. She loves gymnastics and jumping on the trampoline. She watches and admires everything that her older brother does. She's daddy's little girl. She eats meat like nobody's business. She loves her blanket. She enjoys playing with dolls as much as she likes playing with toy cars. She has a best friend at daycare who's name is Victoria. She has eyelashes that every woman would kill for. She has an infectious smile. She's my little princess. She's Amelia :)
 
We rented an inflatable bouncy house for the day from Inflatable Montreal. The kids had the time of their lives playing in it. We threw some balloons in there...they were in heaven. Boy did they sleep well that night :) I'm sincerely considering buying a permanent one for our backyard.
 




And yes...even the adults enjoyed the bouncy house. Screw the weight limit, no way in hell we were gonna pass up bouncing and sliding down that thing..lol







Why is it do difficult to get a decent picture of our family?


Thank you to Patisserie St-Martin for this amazing Barbie cake. For a cake that I requested last minute, boy did they deliver. Beautiful and delicious! Amelia got to keep the Barbie :)

pins I'm currently loving

Yes, ladies, the dreaded bikini season is here. Unless you live in Montreal, then in that case, it's near. (insert swear words here!) 
So I decided to make this edition's "pins I'm currently loving" all about clean eating and effective home workouts. Because let's face it, we all want to strut our stuff in that itsy bitsy teeny weeny yellow polka dot bikini.
 
 
 
We all snack! However instead of going for a chocolate bar or anything else not good for you, save it for your cheat day and snack on these goodies for the rest of the week. They're healthier.

I've tried this and it works! It claims you can lose up to 10lbs in a week. I didn't weigh myself however after completing this diet, my husband actually noticed that my belly was flatter. This also put me on the right track to a healthier way of eating which I am noticing makes the biggest change. I train the same way but modifying my eating habits made all the difference in the way I look...and feel.

 Let's face it, we don't all have the luxury to spend every day inside a gym. Here are great exercises that you can do at home where all you need is your body weight. Believe it, you'll feel it! The more rounds you do, the better. I dare you to make it to 3 rounds :)

We need water, we don't all drink enough as we should. Or at least I know I don't. This picture is a gallon of water which might be too much because apparently you're supposed to drink half of your weight in ounces of water. I just thought it was a cool DIY to keep track of what you drink. Use the bottle that you need and mark the times.

Chocolate Chip Cookie Dough Ice Cream Sandwiches I love all of those so here's a genius who put them all together. Party in my mouth!
 
The best toothpastes for a bright white smile. Because we all want whiter teeth without having to spend the $$$ on professional treatments or home bleaching kits.
 
Life hack. With 2 kids and me being a sympathetic vomiter, this will come very useful to me for many years to come.

I am in the process of growing out my bangs. I've had the same hairstyle long enough and I'm desperately due for a change. With summer coming up, it just seems natural to want to lighten up your locks, so the picture above is a perfect example of what I'm looking for. The cut? Well, I'm still on the fence about that. Maybe we'll start one inch at a time. (I'm one of those people that go into the pool one body part at a time.)

city of angels

For those of you who follow me on Instagram, you'll know that I was in Los Angeles last week for a few days.
What a beautiful city! I would move there in a heartbeat. The weather was just perfect, there are so many places to see and do, the people or at least the ones I met are so kind and sweet, etc. The only down side...THE TRAFFIC!!! But if that's the only thing I would have to complain about, I'll take it!
So here's a brief recap of my 3 day trip.

Started off my Thursday with a quick bite to eat at Toast Bakery Café. I chowed down on the most delicious Caprese Sandwich known to mankind. Sorry for the bad quality photo. This was taken with my iPhone and obviously have not mastered the camera yet :(
  
Next stop, The Ellen DeGeneres Show. This was the reason behind this trip. Andrew surprised me with 2 tickets to attend a taping of her show. I was ecstatic! If you think you're the biggest fan, you thought wrong. IT'S THIS GAL!!! Let me tell you, she's just as amazing, if not more, in person. I absolutely love her and my entire experience.
 
 
And of all the people who came out to see her that day, guess who got chosen to play her game 20 Million Songs, So Little Time? ME!!!! She mispronounces my name and after telling her that she can call me whatever she wants my name ended up being Debbie...but it's Ellen, so be it :) 


It's gotta be a sign. Ellen's parking spot is the #4. That's my favorite number.
 
Did a little shopping at Warner Brother's Studio. Got myself an Ellen cold cup with straw, Ellen underwear for Andrew (pictures to come on Instagram soon ladies...hee hee), and an Ellen keychain. You want some Ellen merchandise, shop online here.
 
First thing Friday morning, headed off to Urth Caffe for some breakfast. Yum! We needed some fuel for our next adventure.
 
What better way to get in shape than with a hike on Runyon Canyon. It took us 1hr30min to hike up to the summit and back down. Great view of the Hollywood sign and the city. On the way there's a few benches which I used to do push-ups, there are bars which you can use to do pull-ups, a stretching area, and also a yoga area.
 


 
I made it to the top!

Before supper that Friday evening, we did some sightseeing. My Ellen appearance earned me a star on the Hollywood Walk of Fame :)
 
I met a few celebrities at the Hollywood Wax Museum.


 
Ended off the night with the most incredible supper at Osteria Mozza. I can't even begin to tell you how mouth watering every single dish was. Andrew and I ate every plate that was brought to our table to the very last bite. We were their best customers :) Too busy devouring our food to take pictures of our meal.
 
Saturday! Headed off to Santa Monica. Beach, pier, shopping...a total must-see when in California.



"Life is like a box of chocolates. You never know what you're gonna get." One of my favorite movies of all time. And how amazing are those sneakers. I'm on a shopping hunt for the exact pair.
